Summer meals to beat the heat
This is the longest stretch of 90 degree weather I can remember. The air conditioner has run nonstop for more than a week, and since it just doesn’t make sense to light the oven when the air conditioner is on (at least to me), I’m wondering what to fix for dinner tonight. Grilling is a great way to get a meal on the table without lighting the oven, but it’s even too hot to grill!
Here are some ideas for quick and easy light summer meals that won’t heat up the kitchen. They’re also perfect for smaller appetites during this heat wave.
• Turn your favorite pasta salad into a main dish by adding leftover grilled chicken, cooked shrimp or canned tuna. Throw in some fresh garden vegetables and this salad is all you’ll need for a light summer meal.
